- Hubster’s birthday today- may this be the best year yet, honey bunny! (And yes, I totally call him honey bunny. He calls me Poopy. I had no idea marriage could do this to you).
- Socktoberfest, which you can find on Flickr and Lolly’s blog, and of course on Ravelry. I’m hoping to finish up some UFO socks, and maybe make a pair of sockies for the hubster, too!
- Crocktober, per one of my favorite cooking blogs, A Year of Slow Cooking. I am a huge fan of crockpot cooking, since there’s nothing better than coming home from work and having dinner ready already.
- RHINEBECK! I cannot believe it’s the weekend after next. So excited! Cannot contain the enthusiasm!
I will be there… knitting socks, apparently.
In that spirit, here’s my meal plan for the week!
Monday: Hubster has requested taco night for his birthday, so taco night it is!
Tuesday: I’m volunteering for Bittman at Sixth & I – so although we will be talking about food, I guess it’s California Tortilla for dinner for me and G is on his own. Conveniently, I have a free birthday burrito to eat!
Wednesday: Lunch is out in DC with my kid sister and G (assuming her flight to the States doesn’t get diverted). Dinner is chicken curry stew.
Thursday: Pot au Feu in the slow cooker, modified from this recipe to be kosher-friendly.
Friday: Subject to change, but probably butternut squash risotto… I have a LOT of butternut squash at home!
Saturday: Out in the Northern Neck for a family gathering
Sunday: French Onion soup and homemade bread?!
Monday (a holiday): vanilla butternut squash and Coq Au Reisling.
Sounds like fall food to me!
Just a note on the excessive squash issue- my hope is to bake up a mess of butternut squash and acorn squash (which I have… many of) early in the week, and have most of it for soup to take to work for lunch (probably Indian curry spiced), and then some left for risotto. Mm! The acorn squash I hope will be good halved, baked with brown sugar and butter, and brought as a main dish for work lunches- with a side of quinoa or other grain and a salad. These are some pretty rich dinners, and I’m on a renewed weight-maintenance kick, so hopefully thinking ahead will make my lunches a bit healthier.
